Moroccan Harira is a rich and flavorful soup, commonly enjoyed during Ramadan but also served throughout the year. This hearty dish is packed with tomatoes, lentils, chickpeas, and aromatic spices, making it both nutritious and delicious. Follow this easy recipe to prepare a traditional bowl of Harira at home.

Ingredients:

  • 1 cup chickpeas (soaked overnight and drained)

  • 1/2 cup green or brown lentils

  • 1 lb (450g) beef or lamb (cut into small cubes) – optional

  • 1 large onion (finely chopped)

  • 4 ripe tomatoes (pureed)

  • 2 tbsp tomato paste

  • 1/2 cup fresh cilantro (chopped)

  • 1/2 cup fresh parsley (chopped)

  • 1/2 cup celery (chopped)

  • 2 tbsp olive oil

  • 1 tsp ground turmeric

  • 1 tsp ground ginger

  • 1 tsp ground cinnamon

  • 1 tsp paprika

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper

  • 7 cups water or broth

  • 1/2 cup vermicelli noodles

  • 2 tbsp flour mixed with 1/2 cup water (to thicken the soup)

  • Lemon wedges for serving

Instructions:

  1. Prepare the Base: Heat olive oil in a large pot over medium heat. Add the chopped onion and meat (if using) and sauté until the meat is browned and the onion is soft.

  2. Add Aromatics and Tomatoes: Stir in the turmeric, ginger, cinnamon, paprika, salt, and black pepper. Add the pureed tomatoes and tomato paste, then cook for about 5 minutes to enhance the flavors.

  3. Add Legumes and Broth: Pour in the lentils, chickpeas, celery, cilantro, and parsley. Add water or broth and bring to a boil.

  4. Simmer: Reduce heat and let the soup simmer for 45-50 minutes, stirring occasionally, until the lentils and chickpeas are tender.

  5. Thicken the Soup: Gradually add the flour-water mixture while stirring continuously to avoid lumps. Let the soup cook for another 10 minutes.

  6. Add Vermicelli: Stir in the vermicelli noodles and cook for 5 more minutes until they soften.
